Ingredients
  

  • 4 ounces gin
  • 2 ounces fresh lemon juice
  • 2 ounces blueberry syrup recipe included
  • Club soda
  • Ice cubes
  • Fresh blueberries for garnish
  • Sprigs of thyme for garnish

Blueberry Syrup:

  • 1 cup fresh or frozen blueberries
  • 1/2 cup sugar
  • 1/2 cup water

Instructions
 

  • Blueberry Syrup: In a small saucepan, combine 1 cup of blueberries, 1/2 cup of sugar, and 1/2 cup of water.
  • Bring to a simmer over medium heat, stirring occasionally until the sugar dissolves and the blueberries break down (about 10 minutes).
  • Remove from heat and let cool. Strain through a fine mesh sieve to remove solids. Store in the refrigerator until ready to use.
  • Cocktail: Fill a cocktail shaker with ice.
  • Add 4 ounces of gin, 2 ounces of fresh lemon juice, and 2 ounces of blueberry syrup to the shaker.
  • Shake well until the mixture is chilled.
  • Fill two glasses with ice cubes.
  • Strain the mixture evenly into the two glasses.
  • Top each glass with club soda and stir gently.
  • Garnish each drink with a sprig of thyme and a few fresh blueberries.
