Ingredients

  • 4 slices of sourdough or rustic bread
  • 100 g Brie cheese sliced
  • 1/2 cup fresh grapes sliced (red or green grapes work well)
  • 1/4 cup walnuts roughly chopped
  • 1 tsp fresh rosemary finely chopped (or 1/2 teaspoon dried rosemary)
  • 1 tbsp butter for toasting
  • Honey optional, for drizzling

Instructions

  • Prepare the Sandwich: Spread butter on one side of each slice of bread.
  • On the unbuttered side, layer slices of Brie, followed by the grapes, walnuts, and rosemary.
  • Top with the second slice of bread, buttered side facing outward.
  • Toast the Sandwich: Heat a pan or sandwich press over medium heat.
  • Place the sandwich in the pan and toast for 3-4 minutes on each side, pressing gently with a spatula until the bread is golden and the cheese is melted.
  • Serve: Once toasted, remove the sandwich from the pan and slice.
  • Optionally, drizzle with a little honey for extra sweetness.

Notes

  • If you prefer a more savory version, omit the honey drizzle.
  • Try using a different nut, such as pecans or almonds, for variety.
  • For a vegan version, use dairy-free Brie and plant-based butter.
Tip: This toastie pairs wonderfully with a crisp white wine or a fresh side salad with citrus dressing.
