For the Donuts:
- 2 cups 250g all-purpose flour (or gluten-free flour blend)
- ¾ cup 150g sugar (cane sugar or coconut sugar)
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup 240ml plant-based milk (almond, oat, or soy)
- 2 tsp vanilla extract or vanilla bean paste
- ¼ cup 60ml melted coconut oil or neutral vegetable oil
- 1 tbsp apple cider vinegar helps with fluffiness
For the Vanilla Glaze (Optional):
- 1 cup 120g powdered sugar
- 2 tbsp plant-based milk
- ½ tsp vanilla extract
Preheat & Prepare: Preheat your oven to 350°F (175°C).
Lightly grease a donut pan with a bit of oil or non-stick spray.
Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Mix the Wet Ingredients: In a separate bowl, whisk the plant-based milk, vanilla extract, melted coconut oil, and apple cider vinegar.
Pour the wet ingredients into the dry ingredients and gently mix until just combined. (Do not overmix, or the donuts may turn dense!)
Fill the Donut Pan: Spoon or pipe the batter into the donut molds, filling each about ¾ full.
Bake to Perfection: Bake for 12-14 minutes, or until the donuts are lightly golden and a toothpick comes out clean.
Let them cool in the pan for 5 minutes, then transfer them to a wire rack.
Make the Glaze & Decorate: In a small bowl, whisk together powdered sugar, plant-based milk, and vanilla extract until smooth.
Dip the donuts into the glaze or drizzle it over the top. Alternatively, dust them with powdered sugar for a classic finish.
