Ingredients
  

For the Donuts:

  • 2 cups 250g all-purpose flour (or gluten-free flour blend)
  • ¾ cup 150g sugar (cane sugar or coconut sugar)
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup 240ml plant-based milk (almond, oat, or soy)
  • 2 tsp vanilla extract or vanilla bean paste
  • ¼ cup 60ml melted coconut oil or neutral vegetable oil
  • 1 tbsp apple cider vinegar helps with fluffiness

For the Vanilla Glaze (Optional):

  • 1 cup 120g powdered sugar
  • 2 tbsp plant-based milk
  • ½ tsp vanilla extract

Instructions
 

  • Preheat & Prepare: Preheat your oven to 350°F (175°C).
  • Lightly grease a donut pan with a bit of oil or non-stick spray.
  • Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Mix the Wet Ingredients: In a separate bowl, whisk the plant-based milk, vanilla extract, melted coconut oil, and apple cider vinegar.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined. (Do not overmix, or the donuts may turn dense!)
  • Fill the Donut Pan: Spoon or pipe the batter into the donut molds, filling each about ¾ full.
  • Bake to Perfection: Bake for 12-14 minutes, or until the donuts are lightly golden and a toothpick comes out clean.
  • Let them cool in the pan for 5 minutes, then transfer them to a wire rack.
  • Make the Glaze & Decorate: In a small bowl, whisk together powdered sugar, plant-based milk, and vanilla extract until smooth.
  • Dip the donuts into the glaze or drizzle it over the top. Alternatively, dust them with powdered sugar for a classic finish.

Notes

  • Make it Gluten-Free: Use a 1:1 gluten-free flour blend for the best texture.
  • No Donut Pan? Use a muffin tin and bake for 16-18 minutes!
  • Storing & Freezing: Store at room temperature for 2 days, in the fridge for 5 days, or freeze for up to 3 months.
