Ingredients
- 2 bunches of fresh wild garlic about 200 g
- 1 medium onion
- 2 cloves of garlic
- 2 tbsp butter or olive oil
- 750 ml vegetable broth
- 200 ml cream or a plant-based alternative
- Salt and pepper to taste
- 1 pinch of nutmeg
- Optional: Crème fraîche or sour cream and croutons for serving
Instructions
- Preparation: Thoroughly wash the wild garlic and separate the leaves from the stems. Coarsely chop the leaves. Peel and finely dice the onion and garlic.
- Sauté Onion and Garlic: In a large pot, heat the butter or olive oil. Add the onion and garlic and sauté over medium heat until translucent, without letting them take on color.
- Add Wild Garlic: Add the chopped wild garlic to the pot and sauté briefly with the onions and garlic until it wilts.
