Ingredients

  • 500 g green asparagus ends trimmed
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper to taste
  • 200 g burrata cheese
  • 250 g cherry tomatoes halved
  • Balsamic glaze for drizzling
  • Fresh basil leaves for garnish

Instructions

Preparation:

  • Preheat the Oven: Set your oven to 200°C (400°F). Line a baking sheet with parchment paper for easy cleanup.
  • Roast the Asparagus: Toss the asparagus with olive oil, salt and pepper on the prepared baking sheet. Roast in the oven for 15-20 minutes, or until tender and slightly charred, turning halfway through.
  • Add the halved Cherry Tomatoes to the Asparagus in the oven for the last 10 minutes.

Assemble the Dish:

  • Arrange the roasted asparagus on a serving platter. Tear the burrata and scatter it over the asparagus. Drizzle with balsamic glaze and garnish with fresh basil leaves before serving.

Notes

Burrata Handling: Burrata should be at room temperature when you serve it to fully enjoy its creamy texture. Remove it from the refrigerator about 15 minutes before you plan to use it.
Serving Suggestion: For an added layer of texture and flavor, consider adding a sprinkle of toasted pine nuts or a few slices of prosciutto to the dish before serving. These elements can introduce a nice crunch and a salty contrast to the creamy cheese and sweet vegetables.
This dish not only captivates with its delightful contrasts in textures and flavors but also offers a visually stunning presentation, promising to be the highlight of your dining experience.
