Ingredients
  

Panna Cotta:

  • 2 cups coconut milk full fat
  • 1 cup almond milk or other plant-based milk
  • 1/2 cup sugar
  • 2 tsp agar-agar powder
  • 1 tsp vanilla extract
  • Pinch of salt

Mirabelle Compote:

  • 2 cups yellow mirabellen pitted and halved
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 1/4 cup water

Instructions
 

  • Prepare the Panna Cotta: In a medium saucepan, combine the coconut milk, almond milk, sugar, agar-agar powder, vanilla extract, and a pinch of salt.
  • Heat the mixture over medium heat, stirring constantly until it comes to a gentle boil. Let it simmer for 2-3 minutes to activate the agar-agar.
  • Remove from heat and let it cool slightly.
  • Pour the mixture into six ramekins or serving glasses. Let them cool to room temperature, then refrigerate for at least 4 hours or until set.
  • Make the Mirabelle Compote: In a saucepan, combine the pitted and halved mirabellen, sugar, lemon juice, vanilla extract, and water.
  • Cook over medium heat, stirring occasionally, until the mirabellen break down and the mixture thickens to a compote consistency, about 10-15 minutes.
  • Remove from heat and let it cool to room temperature.
  • Assemble and Serve: Once the panna cotta is set, spoon the mirabelle compote over each panna cotta serving.
  • Serve immediately, or refrigerate until ready to serve.
