  • 1 cup fresh mirabellen or substitute with small plums, halved and pitted
  • 4 oz creamy goat cheese crumbled
  • 1/2 cup walnuts toasted
  • 1/4 cup red onion thinly sliced

Balsamic Vinaigrette:

  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and pepper to taste

Instructions
 

  • Roast the Mirabellen: Preheat the oven to 375°F (190°C).
  • Place the halved mirabellen on a baking sheet lined with parchment paper.
