  • 8 ounces Whole Grain Pasta about 225 grams, cooked according to package instructions and cooled
  • 1 cup Cherry Tomatoes halved
  • 1/4 cup Pine Nuts toasted
  • Fresh Basil Leaves: For garnish optional

For the Avocado Pesto:

  • 1 large Ripe Avocado
  • 1 cup Fresh Basil packed
  • 1 clove Garlic
  • 2 tbsp Lemon Juice freshly squeezed to prevent browning
  • 2 tbsp Olive Oil
  • 2 tbsp Nutritional Yeast for a cheesy flavor
  • Salt and Pepper: To taste

Instructions
 

  • Prepare the Pasta: Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process and remove excess starch. Set aside to cool.
  • Make the Avocado Pesto: In a food processor, combine the flesh of the ripe avocado, fresh basil leaves, garlic, lemon juice, olive oil and nutritional yeast. Blend until smooth and creamy. Season with salt and pepper to taste. Adjust the consistency by adding a little water or more olive oil if too thick.
  • Toast the Pine Nuts: In a dry skillet over medium heat, toast the pine nuts until golden and fragrant, stirring frequently to prevent burning. Remove from heat and let cool.
  • Assemble the Salad: In a large bowl, combine the cooled pasta, halved cherry tomatoes and toasted pine nuts. Add the avocado pesto and gently toss to coat evenly. Be careful not to mash the ingredients.
  • Garnish and Serve: Garnish with fresh basil leaves if desired. Serve immediately or chill in the refrigerator before serving to allow the flavors to meld together.
