  • 1 oz fresh lemon juice

  • 1 sprig of fresh rosemary
  • Soda water
  • Ice
  • Lemon slice and rosemary sprig for garnish

Instructions
 

  • Make Rosemary-Infused Simple Syrup: In a small saucepan, combine 1/2 cup sugar, 1/2 cup water, and 2-3 sprigs of fresh rosemary.
  • Bring to a simmer over medium heat, stirring until the sugar has dissolved.
  • Remove from heat and let the rosemary steep for about 30 minutes.
  • Strain the syrup into a jar or bottle and let it cool completely. Store any extra syrup in the refrigerator for up to 1 week.
  • Prepare the Cocktail: Fill a cocktail shaker with ice.
  • Add the gin, fresh lemon juice, and 3/4 oz of the rosemary-infused simple syrup.
  • Shake well until the mixture is chilled.
  • Strain the mixture into a glass filled with ice.
  • Top with soda water.
