Ingredients
  

For the Base and Topping:

  • 2 cups old-fashioned oats
  • 1 cup whole wheat flour or all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter melted (can substitute with coconut oil for a vegan option)
  • 1 egg beaten (or a flax egg for vegan: 1 tablespoon flaxseed meal + 3 tablespoons water)
  • 1 teaspoon vanilla extract

For the Strawberry Filling:

  • 2 cups fresh strawberries diced
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • Juice of half a lemon

Instructions
 

Preheat Oven and Prepare Pan:

  • Preheat your oven to 350°F (175°C).
  • Line an 8x8 inch baking pan with parchment paper, letting the excess hang over the edges for easy removal.

Make the Strawberry Filling:

  • In a medium bowl, combine diced strawberries, granulated sugar, cornstarch, and lemon juice. Stir until the strawberries are well coated and set aside.

Prepare the Oat Mixture:

  • In a large bowl, mix together the oats, flour, brown sugar, baking powder, salt, and cinnamon.
  • Add the melted butter, beaten egg, and vanilla extract to the dry ingredients. Mix until everything is well combined and the mixture is crumbly.

Assemble the Bars:

  • Press about two-thirds of the oat mixture into the bottom of the prepared pan to form a firm base.
  • Spread the strawberry filling evenly over the base.
  • Crumble the remaining oat mixture over the strawberry filling.

Bake:

  • Bake in the preheated oven for about 35-40 minutes, or until the top is golden brown and the filling is bubbly.

Cool and Serve:

  • Allow the bars to cool completely in the pan on a wire rack.
  • Once cool, use the overhanging parchment paper to lift the bars from the pan. Cut into squares.
