  • 1 ripe avocado
  • 1 large red or yellow bell pepper
  • 1 tbsp olive oil
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • Balsamic reduction store-bought or homemade
  • Optional: Fresh basil leaves chili flakes, or a sprinkle of feta cheese

Instructions
 

  • Roast the Bell Pepper: Preheat your oven to 400°F (200°C). Slice the bell pepper into strips, discarding the seeds and stem.
  • Toss the bell pepper strips with olive oil and place them on a baking sheet. Roast for 20-25 minutes, or until the peppers are soft and slightly charred. Remove from the oven and let cool slightly.
  • Prepare the Avocado: While the peppers are roasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until smooth. Season with sea salt and black pepper to taste.
