  • 1 1/2 cups all-purpose flour
  • 1 cup brown sugar packed
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup unsalted butter melted

For the raspberry jam filling:

  • 2 cups fresh raspberries
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  • Prepare the Oat Base and Topping: In a large bowl, mix together the oats, flour, brown sugar, baking soda, and salt.
  • Pour in the melted butter and stir until the mixture is crumbly and well combined.
  • Make the Raspberry Jam Filling: In a medium saucepan, combine the fresh raspberries, granulated sugar, lemon juice, and cornstarch.
  • Cook over medium heat, stirring frequently, until the raspberries break down and the mixture thickens, about 5-7 minutes. Remove from heat and let cool slightly.
  • Assemble the Bars: Press about two-thirds of the oat mixture firmly into the bottom of the prepared baking pan to form the crust.
  • Spread the raspberry jam evenly over the crust.
  • Sprinkle the remaining oat mixture over the raspberry layer, pressing down lightly.
  • Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the raspberry layer is bubbling.
  • Remove from the oven and let cool completely in the pan on a wire rack.
  • Serve: Once cooled, use the parchment paper overhang to lift the bars out of the pan. Cut into squares and serve.
