Ingredients
- 1 cup rolled oats
- 1 cup milk dairy or plant-based
- 1/2 cup Greek yogurt
- 2 tbsp peanut butter
- 1 ripe banana mashed
- 1 tbsp chia seeds optional
- 1 tsp vanilla extract
- 1 tbsp honey or maple syrup plus extra for drizzling
- 1/2 tsp ground cinnamon
- 1 small banana sliced (for topping)
Instructions
- Prepare the oats: In a medium-sized mixing bowl, combine the rolled oats, milk, Greek yogurt, peanut butter, mashed banana, chia seeds (if using), vanilla extract, honey, and ground cinnamon.
- Mix well until all the ingredients are thoroughly combined.
- Chill: Divide the mixture into two mason jars or airtight containers.
- Cover and refrigerate overnight, or for at least 4 hours, to allow the oats to soften and the flavors to meld.
- Serve: Before serving, give the oats a good stir.
- Top each serving with banana slices.
