Ingredients
- 1 pizza dough store-bought or homemade
- 1 cup vegan mozzarella cheese shredded
- 2 cups mixed wild mushrooms shiitake, cremini, oyster, sliced
- 1 clove garlic minced
- 2 tbsp olive oil
- 1 tbsp truffle oil
- 1 cup fresh arugula
- Salt and pepper to taste
- Cornmeal for dusting
- Freshly chopped parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat up.
- Prepare Dough: On a lightly floured surface, roll out the pizza dough to your desired thickness. Transfer it to a sheet of parchment paper sprinkled with cornmeal.
- Cook Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Add the sliced mushrooms and cook until they are tender and any released liquid has evaporated, about 5-7 minutes. Season with salt and pepper.
- Assemble Pizza: Spread the vegan mozzarella evenly over the pizza dough. Distribute the cooked mushrooms on top.
- Bake Pizza: Carefully slide the parchment paper with the assembled pizza onto the preheated pizza stone or baking sheet. Bake for 10-12 minutes, or until the crust is golden and the cheese is melted and bubbly.
- Finish Pizza: Remove the pizza from the oven. Drizzle with truffle oil and top with fresh arugula. If desired, garnish with freshly chopped parsley.
- Serve: Slice and serve immediately. Enjoy your luxurious Mushroom and Truffle Pizza!
