- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 tsp salt
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1/3 cup vegetable oil
- 1 large egg
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 cup diced Mirabelle plums fresh or canned
- 1/4 cup Mirabelle plum preserves optional
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, salt, baking powder, and ground cinnamon.
- In a separate bowl, mix the vegetable oil, egg, milk, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the diced Mirabelle plums.
- Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full. If desired, add a small spoonful of Mirabelle plum preserves to the center of each muffin.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
