Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup ricotta cheese
  • 3/4 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup diced Mirabelle plums fresh or canned
  • Butter or oil for cooking
  • Honey or maple syrup for serving
  • Extra ricotta cheese for serving

Instructions
 

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix the ricotta cheese, milk, eggs, and vanilla extract until smooth.
  • Add the wet ingredients to the dry ingredients and stir until just combined. The batter should be slightly lumpy.
  • Gently fold in the diced Mirabelle plums.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  • Flip the pancakes and cook until golden brown on the other side, about 1-2 minutes more.
  • Keep the pancakes warm in a low oven or covered with a clean towel while you cook the remaining batter.
  • Serve the pancakes topped with a dollop of ricotta cheese and a drizzle of honey or maple syrup.
