Ingredients
  

  • 1 baguette sliced in half lengthwise
  • 4 ounces brie cheese thinly sliced
  • 1 cup fresh mirabellen yellow plums, pitted and thinly sliced
  • 1 cup fresh arugula
  • 2 tbsp honey optional for a touch of sweetness
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven: Preheat your oven to 375°F (190°C).
  • Prepare the baguette and mirabelle plums: Cut the baguette and mirabelle plums in half and brush the cut sides with olive oil. Place the baguette halves and half the mirabelle plums cut-side up on a baking tray and toast in the preheated oven for about 5-7 minutes until golden and crispy.
  • Assemble the sandwich: Spread the sliced brie evenly over the bottom half of the toasted baguette.
  • Arrange the sliced mirabellen over the brie.
  • Drizzle honey over the mirabellen slices if using.
  • Top with fresh arugula.
  • Season and finish: Sprinkle a pinch of salt and pepper over the arugula. Place the top half of the baguette over the filling to complete the sandwich.
  • Serve: Slice the sandwich into desired portions and serve immediately.
