  • Pasta – 1 lb Penne
  • Sun-Dried Tomatoes – 1/2 cup chopped
  • Feta Cheese – 3/4 cup crumbled
  • Cucumbers – 1 cup diced
  • Red Onions – 1/2 cup thinly sliced
  • Black Olives – 1/2 cup sliced
  • Olive Oil – 1/4 cup for dressing
  • Lemon Juice – 2 tablespoons
  • Oregano – 1 teaspoon dried
  • Sugar – A pinch

For the Dressing

  • Olive Oil Lemon Juice, Oregano, Sugar, Salt and Pepper

Instructions
 

  • Boil the Penne Pasta as per the package instructions until al dente. Drain and let cool.
  • Prepare your ingredients: Dice cucumbers, slice red onions and black olives, chop sun-dried tomatoes, and crumble the feta cheese.
  • For the dressing, whisk together Olive Oil, Lemon Juice, Oregano, Sugar, and a pinch of Salt and Pepper until emulsified.
