Ingredients
  

  • 1 cup pitted dates
  • 1/2 cup dried cherries
  • 1/2 cup shelled pistachios
  • 1 tsp vanilla extract
  • 1/4 cup shredded coconut optional, for coating

Instructions
 

  • Prepare the Ingredients: If the dates are dry, soak them in warm water for 10 minutes to soften, then drain well.
  • Blend the Ingredients: In a food processor, combine the pitted dates, dried cherries, shelled pistachios, and vanilla extract. Pulse until the mixture is well combined and sticky. You may need to stop and scrape down the sides a few times to ensure everything is well mixed.
  • Form the Energy Bites: Scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands.
  • Optional Coating: If desired, roll the energy bites in shredded coconut to coat.
  • Chill: Place the energy bites on a baking sheet or plate and refrigerate for at least 30 minutes to firm up.
  • Store: Transfer the chilled energy bites to an airtight container. They can be stored in the refrigerator for up to 1 week or in the freezer for up to 1 month.
