  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup almond milk or any plant-based milk
  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 cup fresh cherries pitted and chopped
  • Optional: 1/4 cup chopped walnuts or pecans

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
  • In a large bowl, mix together the flour, oats, brown sugar, salt, baking powder, and cinnamon.
  • In another bowl, whisk together the almond milk, applesauce, melted coconut oil, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  • Gently fold in the chopped cherries and, if using, the nuts.
  • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  • Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
