  • Prepare the Cabbage: Bring a large pot of water to a boil. Carefully peel off 6 large cabbage leaves and blanch them in the boiling water for 2-3 minutes until they are soft and pliable. Remove and drain on a paper towel.
  • Cook the Lentils: In a saucepan, cook the lentils according to package instructions until tender. Drain and set aside.
  • Prepare the Filling: Heat the olive oil in a skillet over medium heat. Add the onion, garlic, and bell pepper, and sauté until softened, about 5 minutes.
  • Stir in the cooked lentils, cumin, smoked paprika, salt, and pepper. Cook for another 2-3 minutes, allowing the flavors to blend. Remove from heat.
