Ingredients
  

  • 3 ripe bananas mashed
  • 1/3 cup coconut oil melted (or any vegetable oil)
  • 1/2 cup brown sugar
  • 1/4 cup almond milk or any plant-based milk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup chopped walnuts
  • Optional: additional walnuts for topping

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  • In a large mixing bowl, combine the mashed bananas, melted coconut oil, brown sugar, almond milk, and vanilla extract. Mix well until smooth.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  • Fold in the chopped walnuts.
  • Divide the batter evenly among the muffin cups, filling each about two-thirds full. Sprinkle additional walnuts on top if desired.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.
