  • 1 kg white asparagus peeled
  • 50 g unsalted butter
  • 100 g breadcrumbs
  • 100 g Parmesan cheese grated
  • 2 tbsp fresh parsley chopped
  • 2 tbsp fresh chives chopped
  • 1 garlic clove minced
  • Salt and pepper to taste

For the Herbed Potatoes:

  • 800 g small potatoes halved
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • Salt and pepper to taste

Instructions
 

  • Prepare the Asparagus: Preheat your oven to 200°C (390°F).
  • Boil asparagus in salted water for about 5-7 minutes until tender but still firm. Drain and set aside in a baking dish.
  • Make the Parmesan Herb Crust: In a bowl, mix breadcrumbs, grated Parmesan, chopped parsley, chives, and minced garlic. Melt butter and pour it over the mixture, combining everything until the mixture is crumbly. Season with salt and pepper.
  • Assemble and Bake: Evenly sprinkle the breadcrumb mixture over the asparagus in the dish.
  • Place in the oven and bake for about 15-20 minutes, or until the crust is golden and crispy.
  • Prepare the Herbed Potatoes: Toss the halved potatoes with olive oil, rosemary, thyme, salt, and pepper.
  • Spread them on a baking sheet and put them in the oven alongside the asparagus. Roast for about 20-25 minutes, or until golden and tender.
  • Serving: Serve the baked asparagus hot from the oven with the herbed potatoes on the side.
