Ingredients
  

  • 2 large aubergines
  • 1/4 cup tahini sesame paste
  • 2 cloves garlic minced
  • 1/4 cup fresh lemon juice about 1-2 lemons
  • 2 tbsp olive oil plus more for serving
  • 1/2 tsp ground cumin
  • Salt to taste
  • Fresh parsley chopped (for garnish)
  • Smoked paprika or ground sumac for garnish

Instructions
 

  • Roast the Aubergines: Preheat your oven to 400°F (200°C).
  • Prick the aubergines several times with a fork and place them on a baking sheet.
  • Roast the aubergines for about 30-40 minutes, turning occasionally, until they are completely soft and the skins are charred. Alternatively, you can char them over an open flame on a gas stove for extra smokiness.
  • Prepare the Aubergine Pulp: Remove the roasted aubergines from the oven and let them cool slightly.
  • Once they are cool enough to handle, cut the aubergines in half lengthwise and scoop out the flesh with a spoon, discarding the skins.
  • Place the aubergine flesh in a colander to drain excess liquid for about 10 minutes.
  • Blend the Ingredients: Transfer the drained aubergine flesh to a food processor or a mixing bowl.
  • Add the tahini, minced garlic, lemon juice, olive oil, ground cumin, and salt.
  • Blend or mash the mixture until smooth and creamy. Adjust seasoning to taste.
  • Serve: Transfer the Baba Ganoush to a serving bowl.
