Ingredients
  

  • 2 large aubergines diced
  • 1/4 cup olive oil
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 2 celery stalks finely chopped
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 2 cups diced tomatoes canned or fresh
  • 1/4 cup green olives pitted and chopped
  • 2 tbsp capers drained and rinsed
  • 1/4 cup pine nuts toasted
  • 1/4 cup raisins optional
  • 2 tbsp sugar
  • 1/4 cup red wine vinegar
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish

Instructions
 

  • Prepare the Aubergine: Place the diced aubergine in a colander, sprinkle with salt, and let it sit for 30 minutes to draw out excess moisture. Rinse and pat dry with a paper towel.
  • Sauté the Aubergine: In a large skillet, heat half of the olive oil over medium-high heat. Add the aubergine and sauté until golden brown and tender, about 10 minutes. Remove from the skillet and set aside.
  • Cook the Vegetables: In the same skillet, heat the remaining olive oil. Add the onion, garlic, celery, and bell peppers. Cook until the vegetables are softened, about 5-7 minutes.
  • Combine Ingredients: Add the tomatoes, olives, capers, toasted pine nuts, and raisins (if using) to the skillet. Stir in the sugar and red wine vinegar. Cook for another 10 minutes, allowing the flavors to meld together.
  • Add the Aubergine: Return the sautéed aubergine to the skillet, stirring to combine. Cook for an additional 5 minutes, seasoning with salt and black pepper to taste.
  • Serve: Transfer the caponata to a serving dish. Garnish with fresh basil leaves and serve warm or cold.
