Ingredients
- 250 g Asparagus trimmed and cut into 1-inch pieces
- 100 g Frozen peas
- 150 g Arborio rice
- 600 ml Vegetable broth warmed
- 1 Small white onion finely chopped
- 1 Garlic clove minced
- 60 ml White wine
- 50 g Parmesan cheese freshly grated
- 1 tbsp Butter
- 1 tbsp Olive oil
- Salt and pepper to taste
- Fresh mint or parsley chopped for garnish (optional)
- Lemon zest from 1 lemon for garnish (optional)
Instructions
- Prepare the vegetables: In a skillet over medium heat, sauté the asparagus pieces in olive oil for about 3-4 minutes until just tender. Add the peas and cook for another 2 minutes. Set aside.
- Cook the risotto: In a separate pot, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until soft and translucent. Stir in the Arborio rice, coating it well with the oil and cook for 1-2 minutes until slightly toasted. Pour in the white wine and let it evaporate.
- Add the broth: Gradually add the warm vegetable broth to the rice, one ladle at a time, stirring continuously until the liquid is absorbed before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
- Combine and finish: Stir the cooked asparagus and peas into the risotto. Add the butter and Parmesan cheese, and stir until the risotto is creamy and well combined. Season with salt and pepper to taste.
- Serve: Plate the risotto, garnish with fresh herbs, lemon zest, and additional Parmesan if desired. Serve immediately.
Notes
- Use Fresh Ingredients: Fresh asparagus and peas will enhance the flavor of the dish significantly. If they're in season, opt for fresh peas over frozen for an even brighter taste.
- Finish with Acidity: Adding a bit of lemon zest or a squeeze of lemon juice before serving can brighten up the flavors, balancing the richness of the Parmesan and butter.
