Ingredients
  

  • 12 ounces fettuccine pasta
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • 1 pound assorted wild mushrooms such as shiitake, porcini, and oyster, cleaned and sliced
  • 1 cup heavy cream
  • 1 tbsp truffle oil
  • Salt and black pepper to taste
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.
  • Sauté the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  • Add the sliced wild mushrooms and sauté for 7-10 minutes, until the mushrooms are tender and browned. Season with salt and pepper to taste.
  • Make the Sauce: Reduce the heat to low and add the heavy cream to the skillet. Simmer gently for a few minutes to let the sauce thicken slightly.
  • Stir in the truffle oil and adjust seasoning as needed.
  • Combine Pasta and Sauce: Add the cooked fettuccine to the skillet with the mushroom sauce. Toss well to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water to loosen it.
  • Serve: Divide the pasta among serving plates. Sprinkle with freshly grated Parmesan cheese and chopped parsley.
