Ingredients
  

  • 250 g soft butter (about room temperature for the best processing) 
  • 100 g fresh wild garlic 
  • 1-2 garlic cloves (optional, depending on the desired intensity of garlic)
  • 1 tsp lemon juice (freshly squeezed) 
  • Salt to taste 
  • Freshly ground black pepper to taste 

Instructions
 

  • Prepare the Wild Garlic: Thoroughly wash the wild garlic under running water and then dry it using a salad spinner or kitchen paper. Remove the stems so only the leaves remain as they have the most intense aroma. 
  • Chop Wild Garlic and Garlic: Chop the wild garlic (and the garlic, if used) as finely as possible. A blender or food processor can be helpful here, but make sure not to create a paste. It’s nice when small pieces are visible in the finished product.
  • Prepare the Butter: Place the soft butter in a medium-sized bowl. Use a hand mixer or a fork to loosen the butter a bit. Then add the chopped wild garlic, garlic (if used), lemon juice, salt and pepper. 
  • Mix Everything: Mix all the ingredients thoroughly until the wild garlic pieces are evenly distributed in the butter. Taste and season with more salt or pepper if necessary.
  • Shape and Cool: Transfer the wild garlic butter onto a piece of cling film or baking paper. Form the butter into a roll and wrap it tightly. Let it set in the refrigerator at least 2 hours, better overnight. 

Tips

  • For an even more refined note, you can mix a little finely grated Parmesan or lemon zest into the butter. 
  • Wild garlic butter can be frozen excellently. This way, you can preserve the taste of spring for several months and enjoy it whenever you like.
