Ingredients
  

  • 2 medium zucchinis chopped
  • 1 can 15 ounces chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 2 cloves garlic
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika optional
  • Salt and pepper to taste
  • Additional olive oil for drizzling optional
  • Fresh herbs for garnish optional

Instructions
 

  • Cook the Zucchini: In a medium saucepan, bring a pot of water to a boil. Add the chopped zucchini and cook for 5-7 minutes, until tender. Drain and let cool slightly.
  • Prepare the Hummus: In a food processor, combine the cooked zucchini, chickpeas, tahini, olive oil, lemon juice, garlic, ground cumin, smoked paprika (if using), salt, and pepper.
  • Blend until smooth and creamy. If the mixture is too thick, add a little water, a tablespoon at a time, until you reach the desired consistency.
  • Taste and Adjust: Taste the hummus and adjust the seasoning as needed, adding more salt, pepper, or lemon juice to taste.
  • Serve: Transfer the zucchini hummus to a serving bowl. Drizzle with additional olive oil and garnish with fresh herbs if desired.
