  • 4 cups red currants fresh or frozen
  • 2 cups granulated sugar
  • 2 tsp freshly squeezed lemon juice
  • 1 tsp lemon zest optional, for added flavor

  • Prepare the Currants: If using fresh currants, rinse them thoroughly and remove them from their stems. If using frozen red currants, allow them to thaw.
  • Cook the Currants: In a large saucepan, combine the currants, sugar, and lemon juice. Add the lemon zest if using.
  • Stir to combine and let the mixture sit for about 10 minutes to allow the sugar to start dissolving.
  • Simmer the Jam: Place the saucepan over medium heat and bring the mixture to a boil, stirring frequently.
  • Reduce the heat to low and let it simmer, stirring occasionally, until the mixture thickens. This should take about 20-30 minutes. Skim off any foam that forms on the surface.
  • Test for Doneness: To check if the jam is ready, place a small spoonful on a chilled plate and let it sit for a minute. If it wrinkles slightly when pushed with your finger, it's done. If not, continue simmering and check again after a few minutes.
  • Jar the Jam: Once the jam has thickened, remove it from the heat and let it cool for a few minutes.
  • Pour the jam into sterilized jars, leaving about 1/4 inch of headspace. Seal the jars with lids.
  • Store the Jam: Let the jars cool to room temperature before storing them in the refrigerator. The jam can be stored in the refrigerator for up to 3 months. For longer storage, you can process the jars in a boiling water bath for 10 minutes and store them in a cool, dark place.
